Riia’s Vegan Cacao Drizzle Scones

Sometimes when I start to cook/bake, I have an idea in my mind of what I want to make…and once I finish it isn’t quite right. However today, I was pleasantly surprised! I wanted to make scones with a little chocolate glaze drizzled on top. I wasn’t sure if they’d come out tasty since I’ve never made scones or chocolate glaze before, but I actually loved them! :) I only want to tweak like one thing and then I’m hoping they’ll be perfect!

I’m going to start making more scone recipes! They’re not only easy, but super tasty too! So expect some more in the future :)

Oatmeal Fruit Pie for Breakfast!
This morning I am indulging in my (newly) favorite breakfast! Oatmeal Fruit Pie! I always eat oatmeal, but I made this one totally differently and it is delish! :) Also, I’m answering a ton of your lovely questions! So sorry it takes me a while to get thought hem! I’m working on it! :)
Oh and it’s Saturday morning everyone! This weekend is crazy because it’s basically my last full one! You know why? Next Sunday I’ll be driving down to my college orientation! Ahh! It’s so crazy that high schools almost over and I will be graduating this coming Thursday! Oh my goodness I can’t even begin to describe the combination of happiness, sadness, and nervousness I am experiencing!

Oh my goodness I can’t even begin to describe the combination of happiness, sadness, and nervousness I am experiencing!

I am constantly thinking of vegan recipes and desserts to bake and when I think of something that I really want to make, I have to do it! Haha recently I really wanted to make a vegan Crumb Cake. I was thinking and searching for ways to create the perfect crumble flavor and texture, and was surprised with how easy the total process came out! :) I ended up making a batch one night, finding it gone the next day, and having to remake it for photos…and it being gone the next day again! So as you can see, both my family and friends thought it was a big hit!
The recipe is a little longer than my usual short and sweet recipes, but it’s delicious none the less! :)
Riia’s Vegan Crumb Cake

For the Topping:

1/3 cup Rolled oats (not instant or quick-cook) 
1/3 cup Sugar 
1/4 cup Flour (I used whole wheat) 
1 Tbsp Cinnamon 
Pinch sea salt 
1/2 cup Chopped Walnuts 
2 Tbsp Olive Oil 
For the cake:

1/2 cup Unsweetened Applesauce 
1 Tbsp Gound Flax Seeds 
1/2 tsp Apple Cider Vinegar 
1/3 cup Sugar 
1 cup Unsweetened Almond Milk 
1/3 cup Olive Oil 
1 tsp Vanilla Extract 
1 ts Lemon Juice 
2 cups Flour (I used whole wheat) 
1-1/2 Tbsp Baking Powder 
1/4 tsp Baking Soda 
1/4 tsp Sea Salt 
Preheat oven to 350 degrees. Oil pan or line with parchment paper.

Make the topping:

Stir oats, sugar, flour, cinnamon and salt together. Add olive oil and mix/pinch until crumbly. Add walnuts. Toss. 

Make the cake:

In a separate bowl, whisk together the applesauce, flax, vinegar, sugar, nut milk, oil, vanilla and lemon juice. 

In another bowl, mix together flour, baking powder, soda, and salt. Add in wet ingredients. Whisk until blended.

Spread batter in pan. Sprinkle topping mixture on top. Press topping lightly into top of the cake. Bake for 30-35 minutes, check if done with a toothpick.

Cool. Serve. Share. Enjoy! :)

Eats According To InstagramThese are just a few of the meals/snacks I ate throughout the day today! A new feature I like to call, Eats According to Instagram! You know, just like how people do things like their day according to Instagram…well I like food & I like to eat, so I decided to mix it up! Haha 

1. My Mini Homemade Vegan Cinnamon Apple Pie Tarts
Last night I was stressing out a little about college and high school graduation. It’s all coming so soon and I couldn’t help but have a few nerves kick in! Rather than dwelling on it, I decided I wanted to bake something! Get my mind off the stress :) So I decided to try my first tarts! I ended up making my own recipe for (pictured above) Vegan Cinnamon Apple Pie Tarts! They were soo yummy! I say that in the past tense because they’re already gone…oops!

2. My Vegan Veggie Rolls
Today, I bought Nori rolls for the first time! I’ve been dying to make vegan sushi for so long and haven’t gotten around to it, so I figured why not try today?! I didn’t end up using any rice, but I did use mixed veggies! I sliced, placed, rolled, and ate! Although they don’t look so great, they tasted amazing! Especially topped with my secret dressing ;) Maybe I’ll share it with you all soon! :)

I actually made a post about this one earlier, which you can see here! Let’s just say I was craving too many foods, so I tossed together a bright salad stuffed with veggies, fruits and seeds!

Summer Stuffed Salad
I have been scrapbooking all morning! As a senior at my highschool, we have to make a “Senior Scrapbook” as the last grade in our English class. The scrapbook has to have 14 pages/stories…so it’s taking forever! I keep getting distracted! Maybe it’s the music I’m listening too, or the salad I’m eating, or the blogs I’ve been creeping through..who knows! So after a long time of cutting, pasting, and writing…I deserved a delicious lunch! What was I craving? …everything! So I made myself, what I’m calling, Summer Stuffed Salad! It’s basically a combo of anything I found in my fridge, but delicious none the less! :)

Ingredients:
Leafy Greens
Spinach
Strawberries
Red Peppers
Green Peppers
Carrots
Apples
Edamame (shelled, of course!)
Hemp Hearts
Raspberry Vinaigrette 

I love all the colors and textures! Mmmmm :)

Orange You Glad It’s Sunday Smoothie
This morning I woke up surprisingly earlier than my usual Sunday wake up at 10:30 in time to get ready for church. Today I was up and kicking at 8 am! …and even more surprisingly, I woke up yesterday at 7:30am! I’m a typical morning person, but weekends aren’t usually my best. However, I can assure you that waking up early on the weekends is amazing! You can savor the whole day! Why waste your days off right?

So this morning I had a pick me up smoothie that I like to call, Orange You Glad It’s Sunday, catchy right?  Ironic though because there isn’t actually any “oranges” in it…but it’s named after the color…duh :)
